Indian vs Chinese dehydrated garlic, and China plus one sourcing

Indian garlic and chilli compete with Chinese supply on spec fit and supply risk, not only scale. Here is where India holds up, where it trails, and how to start a China plus one plan.

Indian and Chinese dehydrated garlic are not identical products, and the better choice depends on your specification, volumes and risk tolerance. China is the larger and more established garlic supplier. India, with Gujarat as a main dehydration region, is the usual alternative for buyers who want a second source, and it can match many specifications if you choose the plant carefully.

The same applies to chilli, where origin and variety matter more than the country label.

How Indian and Chinese dehydrated garlic differ

Differences that buyers commonly report are in flavour intensity, clove and flake size, colour, and the consistency between batches. Garlic varieties differ by region, so the raw material is not the same. Your own sample comparison matters more than any general claim.

Compare these on a sample from each origin, against the same specification:

  • Pungency and aroma, tasted or measured by a lab if your customer needs a figure.
  • Colour and particle size or mesh distribution, which affect blending and appearance.
  • Moisture and bulk density, which affect shelf life and container loading.
  • Microbiology, including Salmonella, and the treatment used to control it.
  • Batch-to-batch consistency over several lots, not a single approved sample.

Where India holds up, and where it can trail

India can match many of these specifications, and Gujarat has plants with long experience of onion and garlic dehydration around Mahuva and elsewhere. See the difference between Indian and Chinese dehydrated garlic for the product details.

Where India can trail is in the depth of the supplier base. China has more large, standardised plants, so some buyers find it easier to get a consistent grade in very large volumes. In India, the range of plant quality is wide, which is why the choice of plant matters. Audits, trial lots and lot testing reduce that gap.

Indian vs Chinese chilli

Chilli differs even more by variety. Heat level, colour value, pod size and stem presence vary by variety and grade. Buyers choose by the specification: heat (Scoville or capsaicin), colour (ASTA units), moisture and size. Indian chilli is grown in several regions with different profiles.

Instead of comparing countries, compare against the specification and test results. Add controls for aflatoxin, pesticide residues and ethylene oxide, covered in aflatoxin in chilli and peanuts.

What China plus one means in practice

China plus one means keeping your existing Chinese supply and adding a second source in another country, so that a disruption in one does not stop your business. It is a risk decision more than a price decision. Reasons include trade measures, port delays, a single point of failure, and customer requirements for a second origin.

Check whether any trade measures currently apply to garlic or chilli products from either country in your market. They change, so ask your customs broker. Do not make the decision from one factor.

How to start an alternative to a Chinese garlic supplier

  • Write down your exact specification and the tests that matter, with limits.
  • Ask for samples from at least three Indian plants and test them against your Chinese reference.
  • Audit the plants that pass, using the checks in what a factory audit should contain.
  • Run a trial lot, then a first container with supervised loading, and test the lot before it ships.
  • Keep both origins running for a few orders to compare real results.

Cost drivers to expect, without a price

We do not quote prices, and a general article cannot. What moves the delivered cost of dehydrated garlic is worth knowing: the raw bulb crop and its season, the grade and particle size, the treatment step, packing, the container load and freight. A cheap quote that skips the treatment step or the testing is not comparable to one that includes them.

A real quote depends on your specification and terms. We give that after the sourcing review, not before.
