Mahuva, a town in Bhavnagar district on the Saurashtra coast of Gujarat, became the centre of Indian onion dehydration because the raw material, the know-how and the ports are all close together. Farmers in the surrounding area grow white onion suited to drying, and processors have built up around that supply over several decades.
Once a cluster forms, it feeds itself. Machinery fitters, packaging suppliers, testing labs, transporters and experienced plant workers all settle where the factories are, and new plants open where those services already exist.
The raw onion is grown nearby
Dehydration needs onion with high dry matter. Every kilo of water in the fresh bulb has to be driven off in the dryer, so an onion with more solids gives more finished product for the same fuel. White onion varieties grown for drying are chosen for that reason, and Saurashtra farmers grow them in volume.
Being near the fields also matters for quality. Onion that travels a long way, or sits in heaps for days, starts to bruise, sprout or rot. Short distances from field to plant mean fresher onion goes onto the belt.
What the cluster gives a buyer
- Choice: many plants of different sizes, so you can compare processors on the same raw material.
- Range: flakes, kibbled, chopped, minced, granules and powder are all made in the area, along with dehydrated garlic.
- Services: labs, carton and liner makers, fumigation and inspection agencies work locally.
- Logistics: Pipavav is close by, and Mundra and other western ports are within road reach.
- Market knowledge: local traders and brokers track daily fresh onion arrivals and prices, which drive dehydrated onion costs.
What the cluster does not guarantee
A Mahuva address is not a quality standard. Plants range from modern units with sterilisation, metal detection and food safety certification to small seasonal dryers with basic hygiene. Some exporters own no plant at all and buy finished goods from others.
Ask who actually dries, mills and packs your order. Our guide on telling a trader from a processor explains the checks. Then see the plant itself. Auditing a dehydration plant in Mahuva covers what to look at, from raw onion intake to the packing room.
Also remember that Mahuva is not the only place in India that dries onion. Other states have units too, but the Bhavnagar cluster is the one most overseas buyers deal with.
Seasonality is built in
Because plants depend on fresh onion, the cluster runs hardest when the local crop arrives. Outside that window, some plants slow down, switch products or stop. That affects lead times and prices, so plan around the onion harvest season for dehydration in Gujarat and confirm the current year with your supplier.
How we help
We are based close to the Mahuva cluster and visit plants in person, so we can tell you which units dry and pack themselves and which only trade. We shortlist processors that fit your form, colour and microbiology needs, then test their samples at an NABL-accredited lab. Start with a free sourcing review.
