Kesar mango pulp, Indian millets, Indian chickpeas and frozen French fries from India come from four very different supply chains, but the buying logic is the same: specify the product, test the sample and check the plant. This is a short orientation to each, with links to the detailed posts.
Kesar mango pulp
Kesar is a Gujarat mango, and its pulp is sold aseptically packed or canned, sweetened or unsweetened. Kesar is not Alphonso: the flavour, colour and season differ, as explained in how Kesar mango differs from Alphonso.
Mango pulp is also sold under different names for the fruit type and the process. Ask whether the pulp is single variety, whether it is made from fresh fruit or from stored frozen fruit, and whether any preservative, acid or sugar has been added. These points go on the label in your market, and your supplier should state them.
Specify Brix, which is the sugar content measured as a percentage, along with acidity, colour and the packing format. The mango season is short, so processors pack for the whole year in a few months, and the crop year affects what you receive.
Indian millets
Millets such as bajra (pearl millet), jowar (sorghum) and ragi are sold as grain, flour, flakes and puffed products. Interest in millets abroad has risen, which is covered in why demand for Indian millets is growing.
Millet products also vary by processing: whole grain, decorticated grain, flour and ready-to-eat forms such as flakes and puffs. Flour made from poorly cleaned grain carries stones and husk, and flour can go rancid faster than grain. Ask for the milling date and the packing date, and agree how long the product must stay in date on arrival.
Specify cleanliness, moisture and the variety, and ask whether the grain is milled and sorted by machine. If you want a gluten-free claim, ask for supporting test evidence and check the rules in your market.
Indian chickpeas
India exports two main types: kabuli, which is large and cream coloured, and desi, which is smaller and darker. They go to different markets and uses. See the chickpea types India exports.
Kabuli chickpeas are sold by size, such as the millimetre grading used in the trade. Ask for size, defects, moisture and insect damage limits, and plan fumigation and phytosanitary requirements with your forwarder.
Frozen French fries
Gujarat has built frozen potato plants, as described in whether Gujarat has become a hub for frozen potato products. Fries need a cold chain from factory to port to your store, so refrigerated containers and temperature records are part of the contract.
Sample before the first order in the way that suits the product: fries should be fried to your own standard, and chickpeas should be cooked and counted. Judge the sample the way your customer will, not the way the supplier suggests.
Specify the cut, the length distribution, the fry colour and the pack size. Ask for the plant's food safety certificate and audit it before the first order.
