Why is India a major source of spices and agri commodities?

India grows almost every major spice and seed in volume, across many climates, with an established processing and export base. Home demand is large too, which shapes supply and price.

India is a major source because it grows a very wide range of spices, seeds, pulses and oilseeds at scale, and has the processors, markets and ports to export them. It is the world's largest producer, consumer and exporter of spices.

That scale gives you choice. It also brings a feature every buyer should understand early. Most of the crop is eaten in India, so domestic demand has a strong pull on what is available for export and at what price.

Many climates, many crops

India covers a tropical coast, dry western plains and cooler hill areas. Each suits different crops, so one country can supply black pepper, cumin, chilli and psyllium in the same year. The main regions, roughly, are listed below. For a fuller picture by crop, see which Indian state is best for sourcing spices and seeds.

  • Gujarat and Rajasthan: cumin, fennel, coriander, fenugreek and psyllium (isabgol), plus groundnut, sesame and castor in Gujarat.
  • Andhra Pradesh and Telangana: chilli, with Guntur as the best-known centre.
  • Telangana, Maharashtra and Tamil Nadu: turmeric, with Erode a well-known trading town.
  • Kerala and Karnataka: black pepper and cardamom.
  • Mahuva in Bhavnagar district, Gujarat: a concentration of dehydrated onion and garlic processing.

An established trading and processing system

Crops move from farm to buyer through regulated wholesale markets, known as APMCs or mandis. Farmers sell there by auction, and processors buy, clean, grade and pack for export. Market towns such as Unjha in Gujarat handle large volumes of seed spices and psyllium.

Processing capacity has grown with export demand. Many plants offer machine cleaning, colour sorting and steam sterilisation, which overseas food manufacturers often require. Container ports on the west coast, such as Mundra, Pipavav and Nhava Sheva, have regular sailings to Europe, the Gulf and the Americas.

Exporters must register with official bodies. Spice exporters need a CRES registration from the Spices Board of India, and many other agri products fall under APEDA. Registration does not prove quality, but it is a basic check.

Why domestic demand matters to you

Indian households and food businesses use large amounts of the same spices you are buying. When the home market is strong, or a crop is short, export prices rise and good lots get scarce. When a crop is large, the reverse can happen.

The government can also restrict exports of some products when domestic supply is tight. Wheat exports were banned in May 2022, and onion exports were banned from December 2023 until May 2024. Rules like these can change at short notice, so check the current notifications from DGFT before you plan a supply programme.

The trade-offs to plan for

Scale does not mean every lot is export-ready. The same features that make India attractive also create risks. Each is manageable with a clear specification, independent testing and someone checking the plant and the loading.

  • Quality varies by farm, season and processor, so a sample from one lot says little about the next.
  • Pesticide residues, aflatoxin and Salmonella are recurring issues, and your own country's limits apply, not India's.
  • Many sellers are traders rather than processors, which weakens control over quality.
  • Seasons and weather drive supply, so the timing of your purchases matters.
