Dehydrated onion and garlic from India: what importers need to know

Dehydrated onion and garlic from India: the forms, the specification points, the season and the risks every first-time importer should understand.

· 3 min read · Creston & Co

Dehydrated onion from India comes mainly from Mahuva, on the Saurashtra coast of Gujarat, and dehydrated garlic comes from the same region. Indian dehydrated onion powder, flakes and granules are made by washing, slicing, drying and grinding fresh onions, so the quality of what you receive depends on the plant's drying and sieving.

This guide gives the importer's view: which forms exist, what to put in a specification, when the plants run, and what goes wrong.

Which form do you need?

The same onion is sold as flakes, kibbled, chopped, minced, granules and powder. The difference is particle size, and each size suits a different use: powder dissolves in sauces and seasonings, minced and chopped hold shape in soups and dry mixes, and flakes suit rehydration. The forms of dehydrated onion lists the standard cuts.

Garlic follows a similar pattern with flakes, granules and powder. See the forms of dehydrated garlic.

Onion also comes in white, red and pink varieties, and the variety changes flavour and colour. Pick the one that fits your recipe before you compare offers.

What belongs in the specification

A specification should name the form, particle size or mesh, colour, moisture, total plate count, yeast and mould, foreign matter and the packing. It should also say which tests are done by the supplier and which by you. How to write a specification for dehydrated onion powder gives a working template.

Moisture is the single most important number because dry onion absorbs water from the air quickly. It browns, cakes and breeds mould when moisture is too high.

Add the colour you expect, a pungency or flavour requirement if your recipe depends on it, and the sieve size with its tolerance. Without those, two suppliers can both meet your paper specification and deliver visibly different products.

Season and supply

Dehydration plants depend on the fresh onion crop, so most production runs during and after the harvest, and plants hold dried stock through the rest of the year. Fresh onion prices move with weather and policy, and they feed into dehydrated prices. We do not quote prices here; a quote needs your form, mesh and quantity.

Plants also differ in how much finished stock they hold. A plant that dries to order may need a few weeks, so ask about lead time and stock position before you plan a launch date.

If a supplier offers you very different prices from others, ask what is different: the onion variety, the drying, the sieving or the grade. Mahuva as the centre of dehydrated onion production explains how the cluster is arranged.

The risks to plan for

Food-safety limits differ by country, so check the current rules with your customs broker or the authority in your market. These are the risks that most often cause trouble.

  • Microbiology: dried onion and garlic can carry salmonella and high plate counts if the plant does not control washing and drying. Ask whether the plant uses steam sterilisation, and confirm what your market requires.
  • Foreign matter: stalks, skin and metal fragments must be removed by sieving and metal detection.
  • Colour and flavour: browning and flavour loss usually mean excess heat or moisture.
  • Caking in transit: packing in liners inside cartons and keeping the container dry reduces it.
